Sautéed Bell Peppers

Preparing sautéed bell peppers is a quick and tasty way to enjoy this vegetable. Here is how you can proceed for a simple and traditional Italian recipe.

Ingredients

  • 4 bell peppers of various colors (red, yellow, green)
  • 2 cloves of garlic
  • 4 tablespoons of extra virgin olive oil
  • Salt to taste
  • Pepper to taste (optional)
  • A sprig of fresh parsley (optional)

Preparation

  1. Wash the peppers, dry them and remove the stems, seeds and the white inner membranes. Then cut them into strips or squares, depending on your preference.
  2. In a large pan, heat the extra virgin olive oil and add the peeled and slightly crushed garlic cloves.
  3. When the garlic begins to golden, add the cut peppers. Stir carefully to flavor them with the oil and garlic.
  4. Cook over medium heat, stirring occasionally, for about 15-20 minutes or until the peppers begin to soften and slightly caramelize on the edges.
  5. Halfway through cooking, adjust with salt and, if you like, pepper. Continue cooking until the desired consistency is reached.
  6. If you like, just before turning off the heat, add the chopped parsley to give the dish an extra freshness.
  7. Serve hot as a side dish or as a main course paired with homemade bread.

Bell peppers are very versatile vegetables and rich in vitamin C. They are perfect as a side dish but can also become a main course if accompanied by bread or grains. In Italy, bell peppers are often also prepared in the form of “peperonata”, cooking them together with tomatoes and onions for an even richer flavor and a softer texture.
