Ingredients

  • 4 John Dory fillets, 200 g each
  • Flour, as needed
  • Extra virgin olive oil
  • 1 clove of garlic
  • Chopped fresh parsley
  • Salt and pepper to taste
  • Lemon juice, to taste

Preparation

  1. Start by bringing the John Dory fillets to room temperature; it will be easier to cook them evenly.
  2. Pat the fillets dry with paper towels to remove excess moisture.
  3. Lightly flour each fillet on both sides, shaking off any excess flour.
  4. Heat a drizzle of olive oil in a large pan over medium-high heat. Add the garlic, taking care not to burn it.
  5. Gently lay the John Dory fillets in the pan and cook for about 3-4 minutes per side, until the flesh becomes opaque and flakes easily with a fork. Season with salt and pepper.
  6. Remove the garlic from the pan and add the chopped fresh parsley, letting it flavor for a few seconds.
  7. If you wish, you can add some fresh lemon juice before serving for a touch of acidity.
