Pan-fried Kid Goat

Ingredients

  • 1 kg of kid goat, cut into pieces
  • 2 cloves of garlic

  • 1 glass of white wine
  • Salt and pepper to taste

Preparation

  1. Start by marinating the pieces of kid goat with lemon juice, rosemary, sage, peeled and crushed garlic, salt, and pepper. Leave to marinate for at least one hour, better if longer, to properly flavor the meat.

  2. In a large skillet, heat the extra virgin olive oil and once hot, fry the pieces of kid goat until they are golden on all sides.

  3. When the meat is well browned, deglaze with a glass of white wine. Let the alcohol evaporate on a high flame.

  4. Lower the flame, cover the skillet with a lid, and cook for about 1 1/2 hours, turning the pieces of meat occasionally, and adding a little water if necessary to prevent them from drying out too much.

  5. At the end of cooking, adjust the salt and pepper if necessary and serve the kid goat hot, with the cooking sauce that has formed in the skillet.

Kid goat meat is very tender and light, so this dish lends itself to be accompanied by a simple side like baked potatoes or a fresh salad.
