Pan-fried Zucchini and Pancetta Focaccia
17/11/2023Here is the recipe for a delicious pan-fried focaccia with zucchini and pancetta. I am sure the combination of flavors will be exquisite.
Ingredients
- 250 g of flour
- 150 ml of lukewarm water
- 1/2 packet of dry yeast (or 12 g of fresh yeast)
- 1 teaspoon of sugar
- 1 teaspoon of salt
- 2 medium zucchinis
- 100 g of diced pancetta
- 2 tablespoons of extra virgin olive oil
- Salt and pepper to taste
- Fresh rosemary (optional)
Preparation

Start by preparing the focaccia dough: dissolve the yeast and sugar in lukewarm water and let it rest for a few minutes until it starts to bubble.

In a large bowl, sift the flour and add the salt. Make a well in the center of the flour and gradually pour in the water and yeast mixture, stirring with a fork or a spatula.

Once the dough begins to take shape, transfer it to a floured surface and knead it until you get a smooth and elastic ball.

Lightly oil a bowl, put the dough inside, and cover it with a damp cloth or plastic wrap. Leave it to rise for about 1-2 hours or until it has doubled in size in a warm place, away from drafts.

Meanwhile, wash and slice the zucchinis into thin rounds. In a pan, sear them with a drizzle of oil for a few minutes, season with salt and pepper, and set aside.

In a non-stick pan, fry the pancetta until it is crispy and set it aside as well.

When the dough has risen, take the pan in which you will cook the focaccia, lightly grease it with some oil, and spread the dough directly inside the pan, trying to give it a round and even shape.

Distribute the zucchini rounds and cubes of pancetta on the surface of the dough, pressing them down slightly. If desired, add a bit of fresh rosemary to flavor.

Cover the focaccia with a lid and let it rest for another 20 minutes so that it can rise a little more.

Cook the focaccia over medium-low heat for about 15 minutes per side, until it becomes golden and crispy. Check often to prevent burning.

Once cooked, let it cool for a few minutes, then cut into wedges and serve.
Trivia
Pan-fried focaccia is a quick version of the traditional baked focaccia and has the advantage of not requiring the use of an oven. Zucchini and pancetta add a touch of moist and savory flavor that pairs well with the softness of the dough.
