Skillet Focaccia

Here is the recipe for a delicious skillet focaccia, perfect for when you crave something tasty but don’t want to turn on the oven.

Ingredients

  • 250 g of type 00 flour
  • 150 ml of lukewarm water
  • 15 g of fresh yeast or 5 g of dry yeast
  • 1/2 teaspoon of sugar
  • 1/2 teaspoon of fine salt
  • 2 tablespoons of extra virgin olive oil
  • Fresh rosemary (to taste)
  • Coarse salt (for garnish)
  • Additional extra virgin olive oil for the skillet and for dressing

Preparation

  1. In a large bowl, dissolve the fresh yeast with the warm water and sugar. If using dry yeast, follow the instructions on the packet for activation.
  2. Gradually add the sifted flour, mixing with a fork or hands.
  3. Incorporate the fine salt and two tablespoons of extra virgin olive oil, then start kneading until you get a smooth and homogeneous dough. If the dough is too sticky, add a little flour; if too dry, a little water.
  4. Let the dough rise, covered with a damp cloth, in a warm place without drafts, until it has doubled in size, about 1-2 hours.
  5. Take the dough, deflate it gently with your hands, and place it into a lightly oiled non-stick skillet.
  6. Spread the dough with your fingers to cover the entire surface of the skillet, creating small holes. Let it rest for another 20-30 minutes.
  7. Sprinkle the surface with fresh rosemary (if desired), coarse salt, and a drizzle of extra virgin olive oil.
  8. Cover the skillet with a lid and cook over low heat for about 15-20 minutes or until the bottom is golden and crispy.
  9. Flip the focaccia with the help of a plate and cook the other side for another 5-10 minutes covered until golden.
  10. Once cooked, transfer the focaccia to a cutting board and let it cool slightly before serving.
