Palermitan Skewers

Ingredients

  • 500 grams of veal (preferably topside) cut into cubes
  • Enough breadcrumbs
  • Grated cheese (pecorino or parmesan) as needed
  • 2-3 cloves of garlic
  • Chopped fresh parsley
  • Extra virgin olive oil
  • Salt and pepper as needed
  • Bay leaves
  • Skewers sticks

Preparation

  1. Begin by mixing in a bowl the breadcrumbs with grated cheese, chopped garlic, and parsley. Add a pinch of salt and pepper and mix well all the ingredients to create the coating for the skewers.
  2. Roll the veal cubes in the coating, pressing well so that it sticks on all sides.
  3. Thread the breaded cubes onto the skewer sticks, alternating them with bay leaves. The skewers should have at least 5-6 cubes of meat each.
  4. Heat a grill or a griddle and lightly grease it with a drizzle of oil.
  5. Cook the skewers on the hot grill, taking care to turn them to cook evenly on all sides. The cooking time will depend on the thickness of the meat and the desired degree of doneness, but as a general rule, 5 to 8 minutes per side are enough.
  6. Once cooked, serve them hot and if you wish add a raw drizzle of oil and a dusting of pepper.
