Paccheri with Scampi and Shrimp Cream

I can give you a typical recipe for paccheri with a scampi and shrimp cream. Here are the ingredients and the preparation:

Ingredients

  • 320 g of paccheri
  • 200 g of scampi
  • 200 g of shrimp
  • 1 clove of garlic
  • Parsley to taste
  • 1 glass of dry white wine
  • 250 ml of cooking cream
  • Extra virgin olive oil
  • Salt and pepper to taste

Preparation

  1. Clean the scampi and shrimp by removing the carapace and intestine and setting aside the heads and shells.
  2. In a pan, sauté a clove of garlic in extra virgin olive oil and add the heads and shells of the scampi and shrimp. Let them brown for a few minutes to release their flavor.
  3. Deglaze with a glass of white wine and let the alcohol evaporate. Add some water and cook for about 10-15 minutes.
  4. Strain the obtained sauce and put it back in the pan. Add the cream, a pinch of salt and pepper, and let it reduce until it becomes a thick cream.
  5. Meanwhile, cook the paccheri in plenty of salted water and drain them al dente.
  6. Sauté the scampi and shrimp in a pan with a drizzle of oil and a clove of garlic for a few minutes. Remove the garlic and add them to the scampi cream.
  7. Add the paccheri to the cream of scampi and shrimp, toss to mix well.
  8. Serve the paccheri hot, garnishing with freshly chopped parsley to taste.

Curiosity

Paccheri are a pasta shape typical of Neapolitan tradition and are perfectly suited to be stuffed or dressed with creamy sauces. Their large size captures the flavor of the sea coming from the scampi and shrimp well.

Make sure to have all the ingredients before starting the preparation. This recipe celebrates the flavors of the sea with an enveloping creaminess that enhances the taste of the shellfish. Enjoy your meal!
