Ingredients
- 320 g of paccheri
- 300 g of shrimp, already cleaned
- 200 g of sweet provola (or provolone) cheese, cubed
- 1 clove of garlic
- 2 tablespoons of extra virgin olive oil
- 200 ml of cooking cream (or, if you prefer a lighter version, you can use tomato passata or fresh tomatoes)
- Chopped parsley (to taste)
- Salt and pepper (to taste)
Preparation
- Start by bringing a pot of salted water to a boil for the pasta.
- Meanwhile, take a large pan and sauté the garlic in oil until it becomes golden, then remove it.
- Add the shrimp to the pan and cook for about 2 minutes per side, until they turn pink. Season with salt and pepper.
- If you like, deglaze with a bit of white wine to add flavor depth, and let the alcohol evaporate.
- Add the cream (or tomato passata) and let it simmer for a few minutes to flavor well.
- Cook the paccheri in boiling water according to the package instructions until they are al dente. Drain the pasta and set aside some of the cooking water.
- Transfer the paccheri to the pan with the sauce and mix gently. If the sauce is too dry, add a bit of the cooking water to blend.
- Add the cubes of provola and let them melt slightly in the warmth of the paccheri, creating a creamy sauce.
