Paccheri Stuffed with Sausage and Mushrooms

Ingredients

  • 12 large paccheri (durum wheat semolina pasta)
  • 200 g of fresh sausage
  • 200 g of mushrooms (porcini or champignon)
  • 1 clove of garlic
  • 1 small onion
  • 50 ml of white wine
  • 150 g of ricotta cheese
  • 30 g of grated Parmesan cheese
  • Fresh parsley to taste
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Tomato sauce (optional)

Preparation

  1. Clean the mushrooms and cut them into small pieces. Finely chop the garlic and onion.
  2. In a pan, sauté the garlic and onion in extra virgin olive oil until they become translucent.
  3. Add the crumbled sausage and let it brown for a few minutes, then add the mushrooms.
  4. Deglaze with the white wine and let the alcohol evaporate, then cook for about 10-15 minutes until the mushrooms are soft. Season with salt and pepper.
  5. Cook the paccheri in abundant salted water following the instructions on the package but draining them a couple of minutes before they are al dente.
  6. Take a portion of the sausage and mushroom mixture and blend it slightly with an immersion blender. Mix it with the ricotta and half of the grated Parmesan cheese. Add the chopped parsley and mix to create the filling.
  7. Stuff each pacchero with the sausage, mushroom, and ricotta filling.
  8. Arrange the stuffed paccheri in a baking dish (you can add a layer of tomato sauce if you like) and sprinkle with the remaining grated Parmesan cheese.
  9. Bake at 180 °C (356 °F) for about 20 minutes until the surface becomes golden and crispy.
