Oysters with Lemon and Pepper

Ingredients

  • Fresh oysters (quantity as desired based on the diners)
  • 1 organic lemon
  • Freshly ground black pepper (q.b. - as much as needed)
  • Crushed or roughly broken ice (optional, to serve)

Preparation

  1. First of all, make sure the oysters are very fresh. They must be hermetically sealed or close quickly if touched.
  2. Thoroughly wash the oyster shells under cold running water to remove any residue or debris.
  3. With a special oyster knife, insert it at the point where the shell opens most easily, leveraging to separate the two shells. Always hold the oyster with a cloth to protect your hand and ensure a safer grip.
  4. Remove the top part of the shell, detaching the oyster from the shell, but leave it in its lower shell with the liquid that envelops it, as that is its natural flavor.
  5. Arrange the oysters on plates over a bed of crushed ice, so they remain cold and stable.
  6. Cut the lemon in half and then into wedges or in such a way to get thin slices.
  7. Serve the oysters with a slice of lemon and invite your guests to sprinkle its juice over the oyster before eating it.
  8. Add a pinch of freshly ground black pepper on top of each oyster just before serving them.

Remember to serve them immediately after dressing to enjoy their freshness and always keep everything very cold.
