Overnight Porridge

Overnight porridge is a simple and nutritious breakfast that is prepared in the evening to be enjoyed the following morning. It is a cold version of the classic cooked porridge and can be personalized with a variety of ingredients to taste. Here is a basic recipe with an Italian twist, using, for example, ricotta to enrich the flavor.

Ingredients

  • 40 g of oat flakes
  • 180 ml of milk (or vegetable substitute like almond milk)
  • 1 tablespoon of chia seeds (optional)
  • 2 tablespoons of ricotta (for an Italian touch)
  • 1 tablespoon of honey or maple syrup
  • Fresh fruit to taste (for example, strawberries or raspberries)
  • Dried fruit, nuts, or chopped almonds (optional)

Preparation

  1. In a jar or bowl that can be sealed airtight, mix the oat flakes with the chia seeds.
  2. Add the milk and honey (or maple syrup), and then mix well to combine all the ingredients. If you’re using ricotta, add it at this step and blend everything together.
  3. Cover the container and let it rest in the refrigerator overnight.
  4. The next morning, take out your porridge from the refrigerator. You will see that the oats have absorbed the milk and become soft and creamy.
  5. Shake the container a bit or stir the porridge with a spoon, add more milk if the consistency is too thick for your tastes.
  6. Add chopped fresh fruit and garnish with dried fruit, nuts, or almonds if you wish to add crunchiness.

Curiosity

Overnight porridge is a variant of the classic Scottish porridge, which doesn’t require cooking and this characteristic makes it perfect for those who have little time in the morning. In Italy, we have the habit of enriching our dishes with fresh and high-quality ingredients, so the addition of ricotta not only provides creaminess but also a supply of protein and calcium.

The beauty of overnight porridge is that it’s a culinary blank canvas: you can modify it in a thousand ways, experimenting with different types of milk, essences (like vanilla), cocoa powder, spices (such as cinnamon), or replacing the honey with other sweeteners of your choice. Enjoy your breakfast!
