Oven-Baked Frittata with Mushrooms

Here is a recipe for a delicious Italian-style oven-baked frittata with mushrooms:

Ingredients

  • 6 eggs
  • 300 g of fresh mushrooms (champignons or porcini, according to your preference)
  • 1 clove of garlic
  • 100 g of grated cheese (pecorino or parmesan)
  • Chopped fresh parsley
  • 2 tablespoons of extra virgin olive oil

Preparation

  1. Preheat the oven to 180 °C (350 °F).
  2. Clean the mushrooms with a damp cloth and slice them thinly. Avoid washing them under water to prevent them from soaking up moisture.
  3. In a pan, heat the olive oil and sauté the chopped garlic until golden. Add the sliced mushrooms, a pinch of salt and pepper, and stir-fry until they are soft and golden. At the end, add the chopped fresh parsley.
  4. In a large bowl, beat the eggs with a pinch of salt and pepper. Add the grated cheese and mix well.
  5. Incorporate the sautéed mushrooms into the bowl with the eggs and mix to distribute evenly.
  6. Grease a baking dish with a little butter and pour the egg and mushroom mixture into the dish.
  7. Bake in the oven for about 20-25 minutes or until the surface of the frittata is golden and the inside is well cooked. You can do the toothpick test to make sure it is cooked just right.
  8. Take the frittata out of the oven and let it rest for a few minutes before cutting and serving it.
