Oven-roasted veal with potatoes

Ingredients

  • 1 kg of veal (silverside or topside for roasting)
  • 800 g of potatoes
  • 4-5 tablespoons of extra virgin olive oil
  • 2 cloves of garlic
  • Fresh rosemary
  • Salt and pepper to taste
  • Vegetable broth or water (if necessary)

Preparazione

  1. Preheat the oven to 180 °C.
  2. Clean and cut the potatoes into pieces or wedges. Put them in a bowl and season with 2-3 tablespoons of extra virgin olive oil, salt, pepper, and a bit of chopped rosemary.
  3. Season the veal roast with salt and pepper. Heat 2 tablespoons of extra virgin olive oil in a pan and brown the piece of meat on all sides to seal it and give it color.
  4. Transfer the roast to a baking dish, add the garlic cloves and a sprig of rosemary. Arrange the seasoned potatoes around it.
  5. Place the roast in the oven and let it cook for about 1 hour and 30 minutes, checking the doneness of the meat and turning the potatoes occasionally. If it starts to dry out too much, add some vegetable broth or water to maintain moisture.
  6. Once cooked, let the veal roast rest for about 10-15 minutes before slicing it, so the juices redistribute inside the meat, making it more succulent.

Serve the sliced roast accompanied by the roast potatoes and, if desired, with a side of seasonal vegetables.
