Ingredients

  • 1 sea bass of about 1 kg, gutted and scaled
  • 4 medium potatoes
  • 2 untreated lemons
  • A few sprigs of rosemary
  • 2 cloves of garlic
  • Extra virgin olive oil
  • Salt to taste
  • Pepper to taste

Preparation

  1. Preheat the oven to 200 °C.
  2. Wash the potatoes well and slice them thinly, leaving the skin on for extra flavor and crunchiness.
  3. Arrange the potato slices in a baking dish, season with a drizzle of oil, salt, pepper, and rosemary. Bake in the oven for about 20-25 minutes, or until they have softened.
  4. In the meantime, wash the sea bass on the outside and pat it dry with kitchen paper. Make transversal cuts on both sides to allow better cooking.
  5. Thinly slice one lemon and insert the slices into the cuts of the sea bass along with some sprigs of rosemary. Also add the garlic cloves inside the fish’s abdomen.
  6. Splash the potatoes with the juice of the second lemon and an extra drizzle of oil, then lay the sea bass on top of the bed of potatoes and season it with salt, pepper, and a drizzle of oil.
  7. Put the sea bass with the potatoes in the oven and let it cook for about 20-30 minutes or until the skin is crispy and the inside is cooked to perfection (the cooking time depends on the size of the fish).
  8. Once ready, serve the sea bass and lemon potatoes hot, drizzled with a raw stream of oil.
