Oven-baked Grouper with Artichokes

I can provide you with a recipe to prepare oven-baked grouper with artichokes. It’s a tasty and refined dish, here is how to proceed.

Ingredients

  • 4 grouper slices
  • 6 artichokes
  • 2 cloves of garlic
  • 1 lemon
  • Parsley to taste
  • Extra virgin olive oil
  • Salt and pepper
  • White wine (optional)

Preparation

  1. Preheat the oven to 180 °C.
  2. Clean the artichokes by removing the outer harder leaves and the tips. Cut them into wedges and dip them in water acidulated with lemon juice to prevent them from blackening.
  3. In a pan, sauté the garlic cloves with a drizzle of extra virgin olive oil. Add the drained artichokes and let them cook for a few minutes. If you prefer, deglaze with a bit of white wine and let the alcohol evaporate.
  4. Once the artichokes are slightly golden, transfer them to a baking dish creating a bed for the grouper slices.
  5. Place the grouper slices on top of the artichokes, season with salt and pepper, and a chopped fresh parsley. Add another drizzle of extra virgin olive oil.
  6. Cover the baking dish with a sheet of aluminum foil and cook in the oven for about 20-25 minutes, depending on the thickness of the fish slices.
  7. For the last few minutes of cooking, you can remove the aluminum foil to slightly brown the surface of the grouper.

An interesting fact about grouper is that this fish is much appreciated in the kitchen for its white and firm flesh, capable of holding its shape during cooking and is perfect for baking.

Enjoy this delicious dish accompanied by a glass of fresh white wine that enhances its flavors.
