Oriental Chicken Salad

Ingredients
- 300g of chicken breast
- 150g of mixed salad (such as lettuce, arugula, and radicchio)
- 1 carrot
- 1 red bell pepper
- 1 cucumber
- A handful of soybean sprouts
- 2 tablespoons of extra virgin olive oil
- White and black sesame seeds to taste
- Soy sauce to taste
- 1 tablespoon of honey
- A pinch of chili pepper
- Salt
- Balsamic vinegar
- 1 lime (juice)
- 1 tablespoon of teriyaki sauce (optional)
- Fresh coriander or Italian parsley (according to preference)
Preparation
- Start by grilling or pan-frying the chicken breast with a drizzle of oil, salt it, and let it cool down once ready.
- In the meantime, wash and slice the salad into strips, the carrot into julienne, the bell pepper and cucumber into thin slices.
- Prepare a vinaigrette by mixing olive oil with a bit of soy sauce, honey, lime juice, a pinch of chili pepper, balsamic vinegar, and salt.
- Cut the chicken into strips and season it with teriyaki sauce if you decide to use it.
- In a large bowl, combine the salad with the cut vegetables, soybean sprouts, and chicken.
- Dress the salad with the prepared vinaigrette and mix well.
- Sprinkle with toasted white and black sesame seeds and chopped fresh coriander, or for an Italian touch, use chopped fresh parsley.
- Serve chilled.
You can also add dried fruit, such as cashews or almonds, for extra crunchiness and flavor. This salad represents a perfect balance between East and West.
