Orecchiette with Broccoli and Sausage

Ingredients

  • 400 g of orecchiette
  • 300 g of broccoli
  • 200 g of sausage
  • 2 cloves of garlic
  • Red pepper flakes (to taste)
  • Extra virgin olive oil
  • Salt
  • Black pepper (to taste)
  • Grated Parmesan cheese (optional)

Preparation

  1. Clean the broccoli by separating the florets from the stems. Boil the broccoli in plenty of salted water for about 5-6 minutes. They should not become too soft. Drain them and save the cooking water to cook the orecchiette.

  2. In a large pan, sauté the garlic cloves in a bit of extra virgin olive oil. Add the crumbled sausage and let it cook until it becomes crispy. If desired, add some red pepper flakes to give the dish a spicy kick.

  3. Meanwhile, cook the orecchiette in the broccoli cooking water, following the package instructions for al dente.

  4. When the orecchiette are almost ready, add the broccoli to the pan with the sausage and let everything flavor for a few minutes, seasoning with salt and pepper if necessary.

  5. Drain the orecchiette and transfer them directly into the pan with the broccoli and sausage. Mix well to flavor the pasta and if necessary, add a little cooking water to keep the dish moist.

  6. Serve the orecchiette hot, with a sprinkling of grated Parmesan cheese, if you wish.
