Orange Tart

Ingredients
- 300 g of type 00 flour
- 150 g of cold butter, cubed
- 130 g of granulated sugar
- 1 whole egg + 1 yolk
- Grated zest of 1 orange (untreated)
- A pinch of salt
For the orange cream:
- Juice of 3 oranges (about 300 ml)
- Grated zest of 2 oranges (untreated)
- 150 g of granulated sugar
- 3 eggs
- 30 g of type 00 flour or starch
- 50 g of butter
Preparation
- Start by preparing the shortcrust pastry. In a large bowl, mix the flour with sugar and a pinch of salt.
- Add the cold cubed butter and work quickly with your fingertips until the mixture becomes sandy.
- Add the egg and yolk, grated orange zest, and knead until the mixture is homogeneous.
- Form a dough ball, wrap it in cling film and let it rest in the fridge for at least 30 minutes.
- In the meantime, prepare the orange cream. In a saucepan, mix the orange juice and zest with sugar and eggs.
- Then add the sifted flour and stir to avoid lumps.
- Place on medium heat and bring to a boil, stirring continuously until the cream starts to thicken.
- Remove from heat and add cubed butter, stirring until fully absorbed. Let it cool.
- Take the pastry out of the fridge and roll it out into a sheet about 5 mm thick.
- Line a previously buttered and floured tart pan, prick the bottom with a fork, and pour in the cooled orange cream.
- With the leftover pastry, you can make strips or shapes to taste to decorate the top of your tart.
- Bake in a preheated oven at 180 °C for about 30 minutes or until the desired browning is achieved.
- Let cool before unmolding and serving the orange tart.
