Orange Trout Salmon

Here is the recipe for a delicious orange trout salmon with an Italian twist. It is an elegant dish that is relatively simple to prepare, pairing the subtle taste of fish with the fresh aroma of oranges.

Ingredients

  • 2 trout salmon fillets (about 200 g each)
  • 2 untreated oranges
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper to taste
  • 1 sprig of rosemary
  • 1 clove of garlic
  • A dash of dry white wine

Preparation

  1. First, preheat the oven to 180 °C.
  2. Thoroughly wash the oranges and grate the zest of one to obtain the orange peel. Squeeze the juice of both oranges and set aside.
  3. Season the trout fillets with salt and pepper on both sides.
  4. In a non-stick frying pan, heat the extra virgin olive oil and lightly fry the unpeeled garlic clove and the sprig of rosemary to flavor the oil.
  5. Remove the garlic and rosemary and place the trout fillets skin-side down. Cook for about 2 minutes, then gently turn the fillets and cook for another 2 minutes.
  6. Deglaze with a bit of white wine and let the alcohol evaporate.
  7. Add the orange juice and grated zest, and cook for another 2-3 minutes until the fish is well cooked and has absorbed some of the orange flavor.
  8. Transfer the trout fillets to a baking dish, pouring over the remaining orange sauce from the pan.
  9. Bake in the oven for about 5-10 minutes or until the trout is golden brown.
  10. Serve the hot orange trout straight away, drizzling with the remaining cooking sauce.
