Orange poke cake
17/11/2023The Orange Poke Cake is a sweet temptation that combines the freshness of citrus with the softness of a fluffy cake. Here’s how you can prepare it:
Ingredients
- 200 g of flour
- 200 g of sugar
- 4 eggs
- 120 ml of fresh orange juice
- Grated zest of 1 orange
- 1 sachet of baking powder
- A pinch of salt
- 120 ml of seed oil
For the syrup:
- 120 ml of fresh orange juice
- 50 g of powdered sugar
For the orange cream:
- 250 ml of whipping cream
- 200 g of mascarpone
- 100 g of powdered sugar
- Grated zest of 1 orange
Preparation
- Preheat the oven to 180 °C and prepare a buttered and floured cake tin.
- In a bowl, whisk the eggs with the sugar until you get a light and fluffy mixture.
- Slowly incorporate the oil, continuing to mix.
- Add the orange juice and zest, then fold in the sifted flour, baking powder, and salt, mixing gently to not deflate the mixture.
- Pour the batter into the tin and bake in the oven for about 30-35 minutes or until a skewer inserted into the center of the cake comes out clean.
- While the cake is baking, prepare the syrup by mixing the orange juice and powdered sugar until the latter has completely dissolved.
- Take the cake out of the oven and, while it’s still hot, poke holes on the surface with the handle of a wooden spoon.
- Pour the syrup over the holes so that the cake can absorb it.
- For the orange cream, whip the cream and, in another container, whip the mascarpone with the powdered sugar and orange zest.
- Gently combine the two mixtures and spread the cream over the surface of the cooled cake.
- Let it rest in the refrigerator for a few hours before serving.

The Poke Cake, literally “poked cake,” originated in the United States in the ’70s. The peculiarity of this cake is that, after baking, it is literally “poked” and then soaked with sauces or other liquids that make it moist and even more delicious. In the case of the orange version, the fresh citrus aroma makes it an ideal dessert for the warm seasons or for a light and refreshing end to a meal.
