Orange Muffins

Here is a delicious recipe to prepare Orange Muffins with an Italian twist.

Ingredients

  • 250 g of all-purpose flour
  • 150 g of sugar
  • 100 ml of vegetable oil
  • 2 eggs
  • 150 ml of orange juice (better if fresh)
  • Grated zest of one organic orange
  • 1 packet of baking powder for sweets
  • A pinch of salt
  • (Optional) 50 g of dark chocolate chips

Preparation

  1. In a bowl, beat the eggs with the sugar until you get a light and fluffy mixture.
  2. Add the vegetable oil and continue mixing well to incorporate.
  3. Add the orange juice and zest to the mixture, stirring gently.
  4. In another bowl, sift the flour with the baking powder and a pinch of salt.
  5. Add the dry ingredients to the wet mixture, stirring just until the flour is no longer visible, to keep the muffins soft.
  6. (Optional) Add the chocolate chips and gently mix with a spatula.
  7. Prepare a muffin tin with paper liners and distribute the mixture, filling each cavity about 3/4 full.
  8. Preheat the oven to 180 °C (356 °F) and bake the muffins for about 20 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the muffins cool before serving.
