Ingredients

For the base:

  • 100 g of melted butter

For the filling:

  • 120 g of icing sugar
  • 200 ml of fresh cream
  • Grated zest of 2 untreated oranges
  • Juice of 1 orange
  • 1 packet of powdered gelatin (or 10 g of fish gelatin)

For the topping:

  • 2 oranges (to obtain thin slices)
  • 2 tablespoons of sugar
  • 1 tablespoon of water
  • 2 tablespoons of orange liqueur (like Grand Marnier or Cointreau) – optional

Preparation

  1. Begin by preparing the base: finely chop the biscuits and mix them with the melted butter. Press this mixture evenly onto the bottom of a springform pan, creating a compact base. Refrigerate to firm up for about 30 minutes.

  2. For the cheesecake filling, place the spreadable cheese and icing sugar in a bowl. Work the two ingredients until you obtain a smooth cream.

  3. Add the grated orange zest and incorporate well.

  4. Heat the orange juice without bringing it to a boil, add the gelatin following the manufacturer’s instructions to completely dissolve it, then let the mixture cool and mix it with the cheese cream.
