Egg-free Orange Cake

Ingredients

  • 300 g of all-purpose flour
  • 200 g of granulated sugar
  • 100 ml of sunflower seed oil
  • 200 ml of fresh orange juice (about 2 oranges)
  • The grated zest of 1 untreated orange
  • 1 packet of baking powder (16 g)
  • 1 pinch of salt
  • (Optional) 1 teaspoon of apple cider vinegar or cider (helps the batter rise)

Preparation

  1. Preheat the oven to 180 °C.
  2. In a large bowl, mix the sifted flour with the sugar, baking powder, and a pinch of salt.
  3. In another bowl, combine the orange juice, sunflower seed oil, and grated orange zest. If you decide to use vinegar, add it to this mixture.
  4. Pour the liquid ingredients into the dry ones and mix well with a spatula or a wooden spoon until you obtain a smooth, lump-free batter.
  5. Grease and flour a cake pan or line it with parchment paper.
  6. Pour the batter into the pan and level it with the spatula.
  7. Bake the cake and let it cook for about 35-40 minutes or until a skewer inserted in the center comes out clean.
  8. Remove the cake from the oven and let it cool completely before unmolding.
