Egg-free Orange Cake

Ingredients
- 300 g of all-purpose flour
- 200 g of granulated sugar
- 100 ml of sunflower seed oil
- 200 ml of fresh orange juice (about 2 oranges)
- The grated zest of 1 untreated orange
- 1 packet of baking powder (16 g)
- 1 pinch of salt
- (Optional) 1 teaspoon of apple cider vinegar or cider (helps the batter rise)
Preparation
- Preheat the oven to 180 °C.
- In a large bowl, mix the sifted flour with the sugar, baking powder, and a pinch of salt.
- In another bowl, combine the orange juice, sunflower seed oil, and grated orange zest. If you decide to use vinegar, add it to this mixture.
- Pour the liquid ingredients into the dry ones and mix well with a spatula or a wooden spoon until you obtain a smooth, lump-free batter.
- Grease and flour a cake pan or line it with parchment paper.
- Pour the batter into the pan and level it with the spatula.
- Bake the cake and let it cook for about 35-40 minutes or until a skewer inserted in the center comes out clean.
- Remove the cake from the oven and let it cool completely before unmolding.
