Open Lasagna with Salmon, Grilled Zucchini and Eggplant

Ingredients

  • 200 g of fresh salmon
  • 4 sheets of fresh lasagna pasta
  • 2 medium zucchinis
  • 1 medium eggplant
  • 100 ml of fresh cream
  • 50 g of grated Parmesan cheese
  • Extra virgin olive oil
  • Salt and pepper to taste
  • A few fresh basil leaves (optional)
  • Butter for greasing the baking dish

Preparation

  1. Begin by grilling the vegetables. Slice the zucchini and eggplant lengthways, then grill the slices on a hot grill after lightly oiling and salting them. Grill until they have the classic grill lines on both sides. Set aside.

  2. Lightly grease a baking dish with butter and cook the lasagna sheets in boiling salted water for about 3-4 minutes or according to the manufacturer’s instructions. Gently drain and lay them on a clean cloth to dry.

  3. In the meantime, cook the salmon in a non-stick pan after seasoning it with salt and pepper. Cook for about 2-3 minutes per side, depending on thickness. Once ready, allow it to cool slightly and then flake it into pieces with the help of a fork.

  4. Now proceed to assemble the lasagna. Start with a sheet of lasagna, spread some cream on it, then add a layer of grilled vegetables and on top of them the salmon pieces. Sprinkle with grated Parmesan cheese.

  5. Overlap another sheet of lasagna and repeat the layers as above, finishing with grilled vegetables and Parmesan.

  6. Bake the lasagnas at 180 °C for about 10-15 minutes or until the cheese is well melted and golden brown.

  7. Serve the hot lasagnas, garnished with fresh basil leaves for a touch of color and freshness.
