Ingredients
- Slices of homemade bread or baguette: as needed
- Red onions: 3 large
- Extra virgin olive oil: 3 tablespoons
- Balsamic vinegar: 1 tablespoon
- Salt: to taste
- Pepper: to taste
- Goat cheese or other spreadable cheese: 150 g
- Freshly chopped aromatic herbs (rosemary, thyme, oregano): 1 tablespoon
- Pitted black olives (optional): a handful
Preparation
- First, thinly slice the onions and stew them in a pan with extra virgin olive oil over medium-low heat until they become translucent and soft. This might take about 15-20 minutes.
- Add balsamic vinegar, salt, and pepper, and continue cooking until the liquid has evaporated and the onions have turned a caramelized color.
