Onion Frittata

Here is the classic recipe for the onion frittata, a simple but flavorful dish.

Ingredients

  • 4 eggs
  • 2 large onions
  • 2 tablespoons of extra virgin olive oil
  • Salt to taste
  • Black pepper to taste (optional)
  • Grated cheese such as Parmesan or Pecorino (optional)

Preparation

  1. Start by peeling the onions and slicing them thinly.
  2. In a pan, heat the extra virgin olive oil and add the sliced onions. Let the onions cook over medium-low heat until they become transparent and slightly golden.
  3. Meanwhile, in a bowl, beat the eggs with a pinch of salt and, if you like, some freshly ground black pepper.
  4. Once the onions are ready, spread them evenly in the pan and pour the beaten egg mixture over them.
  5. Allow the frittata to cook over medium-low heat and, if desired, sprinkle some grated cheese over the surface before cooking.
  6. As soon as the underside of the frittata has set and browned, with the help of a lid or a large plate, flip it to cook the other side.
  7. Finally, cook for a few more minutes until both sides of the frittata are golden brown and the inside is cooked but soft.
