Frittata Tramezzini

The tramezzini with frittata are a classic for an Italian-style picnic, perfect also for a quick lunch or a substantial snack. Here is how to prepare them.

Ingredients

  • Eggs, 4-6 depending on the desired size of the frittata
  • Milk, a tablespoon
  • Salt, to taste
  • Pepper, to taste
  • Grated cheese, optional, 2 tablespoons
  • Chives or chopped parsley, optional
  • Sandwich bread, 8 slices (crustless for a more authentic result)
  • Cold cuts of choice, for example, cooked or raw ham, 100g
  • Mayonnaise, to taste
  • Lettuce, to taste

Preparation

  1. In a bowl, beat the eggs with the milk, salt, and pepper. If you decide to use them, add the grated cheese and chopped herbs. This will enrich the flavor of the frittata.
  2. Heat a non-stick pan and pour the mixture in. Cook on one side and, when it is firm enough, flip it to cook on the other side.
  3. Once ready, let the frittata cool. Then, cut it to the size of the bread slices.
  4. Spread a thin layer of mayonnaise on one side of the bread slices.
  5. Place your preferred cold cuts on top, followed by a piece of frittata and washed and dried lettuce leaves.
  6. Complete with another slice of bread and press down slightly.
  7. Cut the tramezzini diagonally to form triangles.

The tramezzino is a type of sandwich that originated in Italy at the beginning of the 20th century, its name deriving from the term “tramezzo”, used to indicate something consumed between meals. The uniqueness of Italian tramezzini lies in the soft crustless bread and the variety of fillings.

For a slightly lighter version, you can grill the bread slices on a grill plate before assembling the tramezzino. Make sure to use a bit of oil if you do this, to prevent the bread from sticking and to give it a pleasant grilled flavor.
