Frittata Roll with Prosciutto and Scamorza

Ingredients

  • 8 large eggs
  • 100 g of cooked ham, sliced
  • 150 g of smoked scamorza cheese, thinly sliced

  • Extra virgin olive oil or butter to grease the pan

Preparation

  1. Beat the eggs in a large bowl until homogeneous. Add salt, pepper, and the chopped herbs, and mix well.
  2. Lightly grease a non-stick pan with oil or butter and heat over medium heat. Pour in the egg mixture and cook for about 4-5 minutes or until the bottom is golden brown and the surface is almost completely set.
  3. Using a spatula, check that the frittata does not stick to the edges of the pan, and when ready, flip it onto a plate and then back into the pan to cook the other side.
  4. Once this side is also cooked, transfer the frittata onto a clean surface or a sheet of parchment paper to cool down a bit.
  5. When the frittata is lukewarm, evenly distribute the slices of cooked ham and smoked scamorza cheese over the entire surface.
  6. Carefully roll up the frittata on itself, using the parchment paper if you’ve used it, starting from one long side towards the other.
  7. Wrap the obtained roll in parchment paper or cling film and place it in the refrigerator for at least one hour before serving, so that it firms up.
  8. When ready to serve, cut the frittata roll into slices about 1-2 cm thick.

You can garnish with additional herbs or serve with a sauce, for example, a simple mayonnaise enriched with chopped chives, to add freshness and flavor.
