Ingredients
- 6 eggs
- 100 g of cooked ham (or raw if you prefer)
- 100 g of caciotta cheese (or another soft cheese of your choice)

- Extra virgin olive oil, as needed to grease the pan
- Aromatic herbs to taste (optional, such as parsley or basil)
Preparation
- Start by beating the eggs in a large bowl, add salt and pepper to taste. If you wish, you can enrich the omelette with chopped aromatic herbs.
- Heat a non-stick pan (large enough to make a thin omelette) with a little bit of extra virgin olive oil.
- Pour the beaten eggs into the hot pan, then lower the flame and cover with a lid to allow for even cooking.
