Omelette (basic recipe)
17/11/2023The omelette is a classic French dish but let’s see how to give it an Italian twist!
Ingredients
- 2 large eggs
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon of milk or water (optional, to make the omelette fluffier)
- 1 tablespoon of grated Parmesan cheese (for an Italian touch)
- 2 teaspoons of butter or extra virgin olive oil (oil for a more Italian version)
Preparation
- Break the eggs into a bowl and whisk them with a fork or a whisk. Add salt, black pepper, and if desired, a tablespoon of milk or water. This will make the omelette fluffier.
- Add the grated Parmesan to the eggs and mix well to distribute it evenly.
- Heat a non-stick pan over medium heat and add the butter or olive oil.
- Once the butter has melted or the oil is hot, pour the egg mixture into the pan.
- Wait a few minutes until the omelette begins to set at the bottom, then, using a spatula, gently lift the edges while tilting the pan to allow the liquid egg to flow to the sides.
- When the omelette is almost completely cooked but still a bit soft in the center, fold it in half with the spatula.
- Cook for another minute or two if you prefer a drier texture, or remove from heat otherwise.
- Serve hot, perhaps with a fresh salad or some tomatoes on the side.
To vary it, you can add ingredients to the filling such as sautéed spinach, sautéed mushrooms, sun-dried tomatoes, mozzarella, or cooked ham, always maintaining strong inspiration from Italian cuisine.
