Omelette (basic recipe)

The omelette is a classic French dish but let’s see how to give it an Italian twist!

Ingredients

  • 2 large eggs
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon of milk or water (optional, to make the omelette fluffier)
  • 1 tablespoon of grated Parmesan cheese (for an Italian touch)
  • 2 teaspoons of butter or extra virgin olive oil (oil for a more Italian version)

Preparation

  1. Break the eggs into a bowl and whisk them with a fork or a whisk. Add salt, black pepper, and if desired, a tablespoon of milk or water. This will make the omelette fluffier.
  2. Add the grated Parmesan to the eggs and mix well to distribute it evenly.
  3. Heat a non-stick pan over medium heat and add the butter or olive oil.
  4. Once the butter has melted or the oil is hot, pour the egg mixture into the pan.
  5. Wait a few minutes until the omelette begins to set at the bottom, then, using a spatula, gently lift the edges while tilting the pan to allow the liquid egg to flow to the sides.
  6. When the omelette is almost completely cooked but still a bit soft in the center, fold it in half with the spatula.
  7. Cook for another minute or two if you prefer a drier texture, or remove from heat otherwise.
  8. Serve hot, perhaps with a fresh salad or some tomatoes on the side.

To vary it, you can add ingredients to the filling such as sautéed spinach, sautéed mushrooms, sun-dried tomatoes, mozzarella, or cooked ham, always maintaining strong inspiration from Italian cuisine.
