Olive Oil Plumcake

The olive oil plumcake is a variant of the classic plumcake, which uses seed oil as the main fat instead of butter. This gives the cake a distinctive softness and makes it lighter. Here is the recipe for a delicious olive oil plumcake.

Ingredients

  • 200 g of sugar
  • 3 eggs
  • 120 ml of seed oil (such as sunflower or corn oil)
  • 120 ml of milk
  • 300 g of type 00 flour
  • 1 packet of baking powder (about 16 g)
  • 1 pinch of salt
  • The grated zest of 1 lemon (or orange if you prefer a different aroma)
  • A bit of butter and flour (or parchment paper) to prepare the mold

Preparation

  1. Preheat the oven to 180 °C in static mode.
  2. Grease a plumcake mold with a bit of butter and dust with a bit of flour, or line it with parchment paper.
  3. In a large bowl, whisk the eggs with the sugar until the mixture is frothy and light.
  4. Add the grated lemon or orange zest for flavoring.
  5. Slowly pour in the seed oil while continuing to stir.
  6. Integrate the milk into the mixture and keep stirring.
  7. In a separate bowl, sift the flour with the baking powder and the pinch of salt.
  8. Fold the dry ingredients into the liquid mixture, mixing gently to avoid lumps.
  9. Pour the batter into the prepared mold and level it with a spatula.
  10. Bake the plumcake for about 40 minutes or until a skewer inserted in the center comes out clean.
