Octopus Stew with Herbs

Ingredients

  • 1 octopus of about 1 kg
  • 1 bunch of mixed fresh herbs (parsley, thyme, rosemary, oregano)

Preparation

  1. Start by cleaning the octopus: remove the innards and the central part of the head, then rinse the octopus under cold water, making sure to clean the tentacles well.
  2. In a large pot, bring water to a boil and blanch the octopus a couple of times: dip it in boiling water for a few seconds and then lift it out, repeating the operation three times. This process will help to tenderize it.
  3. In a wide saucepan, lightly fry the garlic cloves in extra virgin olive oil.
  4. Add the octopus cut into not too small pieces and roast for a few minutes.
  5. Deglaze with white wine and let the alcohol evaporate on high heat.
  6. Add the previously crushed peeled tomatoes, salt, pepper, and a pinch of chili pepper if you like.
  7. Cook on low heat with the lid on for about 40-50 minutes, or until the octopus is tender. If necessary, add a bit of water during cooking to prevent it from drying out too much.
  8. After the cooking time, add the finely chopped fresh herbs and let the stew absorb the flavors for a few minutes.
  9. Taste and adjust salt and pepper if necessary.
