Ingredients

  • 200 g of wholegrain flour
  • 100 g of oat flakes
  • 100 g of brown sugar (or another sweetener of your choice)
  • 2 eggs
  • 100 ml of milk (you can use cow’s milk or a vegetable drink)
  • 80 ml of seed oil (for example sunflower oil)
  • 1 packet of baking powder (about 16 g)
  • 1 pinch of salt
  • Flavoring of your choice (for example vanilla or grated lemon zest)

Preparation

  1. Preheat the oven to 180 °C.
  2. In a bowl, mix the wholegrain flour, oat flakes, brown sugar, baking powder, and the pinch of salt.
  3. In another bowl, beat the eggs with the chosen flavoring, then add the milk and seed oil and mix until you get a homogeneous mixture.
  4. Combine the liquid ingredients with the dry ones and mix well to avoid lumps.
  5. Pour the mixture into a plumcake mold previously buttered and floured or lined with parchment paper.
  6. Bake the plumcake for about 35-40 minutes, or until it is golden brown and a toothpick inserted in the center comes out clean.
  7. Take the plumcake out of the oven and let it cool before removing it from the mold and serving.
