Oatmeal Pancakes

Ingredients
- 100g of oat flakes
- 1 ripe banana
- 1 egg (or a vegan substitute such as 1 tablespoon ground flax seeds with 3 tablespoons of water, let sit to form a gel)
- About 120ml of milk of choice (cow, almond, soy, etc.) to reach the desired consistency
- 1/2 teaspoon of baking powder
- A pinch of salt
- Coconut oil or butter to grease the pan
- Honey or maple syrup for dressing (optional)
- Fresh fruit for garnish (optional)
Preparation
- Start by transforming the oat flakes into flour, using a blender until you get a fine powder.
- Mash the banana with a fork in a large bowl until a puree is obtained.
- Add the egg to the banana puree and mix well to combine.
- Combine the oat flour, baking powder, and salt to the banana and egg mix.
- Gradually pour in the milk, stirring, until you reach the desired consistency for the pancake batter (not too liquid but not too thick).
- Heat a non-stick pan over medium heat and grease with a little coconut oil or butter.
- Pour a small amount of batter into the pan to form each pancake.
- Cook the pancake for about 2-3 minutes per side, or until they become golden brown and well cooked.
- Serve the pancakes warm with honey or maple syrup and, if you like, with fresh fruit cut into small pieces.
