Preparation

  1. Start by transforming the oat flakes into flour, using a blender until you get a fine powder.
  2. Mash the banana with a fork in a large bowl until a puree is obtained.
  3. Add the egg to the banana puree and mix well to combine.
  4. Combine the oat flour, baking powder, and salt to the banana and egg mix.
  5. Gradually pour in the milk, stirring, until you reach the desired consistency for the pancake batter (not too liquid but not too thick).
  6. Heat a non-stick pan over medium heat and grease with a little coconut oil or butter.
  7. Pour a small amount of batter into the pan to form each pancake.
  8. Cook the pancake for about 2-3 minutes per side, or until they become golden brown and well cooked.
  9. Serve the pancakes warm with honey or maple syrup and, if you like, with fresh fruit cut into small pieces.
