Oat Flakes Cookies

Ingredients
- 100 g of oat flakes
- 100 g of flour (preferably wholemeal for a more rustic touch)
- 100 g of butter or margarine
- 80 g of sugar (brown for a more aromatic note)
- 1 egg
- 1/2 teaspoon of baking powder
- 1 pinch of salt
- Optional: grated zest of lemon or orange, raisins, chocolate chips, nuts
Preparazione
- Preheat the oven to 180 °C.
- In a bowl, mix the oat flakes with the flour, baking powder, and salt.
- In another bowl, cream the butter with the sugar until creamy. Add the egg and continue to mix.
- Combine the two mixtures, possibly adding the citrus zest or other optional ingredients.
- With slightly damp hands, form small mounds of dough and place them on a baking sheet lined with parchment paper, leaving a bit of space between each.
- Bake in the oven for about 15 minutes or until they become golden.
- Let them cool on a rack before serving.
