Oat Baskets Filled with Yogurt

Oat baskets filled with yogurt are a delicious and healthy option for breakfast or a snack. Let me describe how to make them with an Italian touch. For example, you can enhance your yogurt with Italian fruit jam or add a pinch of vanilla or lemon zest for flavor.

Ingredients

  • 100 g of oat flakes
  • 2 tablespoons of honey (or maple syrup if you prefer)
  • 30 g of melted butter or coconut oil
  • 1 pinch of salt
  • Greek yogurt or another yogurt of your choice
  • Fresh fruit for garnish (strawberries, blueberries, kiwi or other seasonal fruit)
  • Jam (optional)
  • Vanilla or lemon zest (optional)

Preparation

  1. Preheat the oven to 180 °C.
  2. In a bowl, mix the oat flakes with the honey, melted butter (or coconut oil), and a pinch of salt until you have a uniform mixture.
  3. Take some muffin molds and distribute the oat mixture into the cavities, pressing well on the bottom and sides to form the baskets.
  4. Bake in the oven for about 15-20 minutes or until the edges begin to brown.
  5. Let cool completely before gently removing the baskets from the molds.
  6. Once cooled, fill each basket with Greek yogurt and decorate with cut fresh fruit.
  7. If desired, add a spoonful of jam at the bottom of the basket before adding the yogurt, and flavor the yogurt with a pinch of vanilla or grated lemon zest.

Curiosity

The oat baskets are a great source of fiber and the inclusion of yogurt will provide you with a good dose of protein. This recipe is adaptable: you can replace the honey with other sweeteners, or the oats with a mix of cereals. Furthermore, you can customize the baskets with different types of yogurt, such as coconut yogurt for a more exotic taste, or use lactose-free yogurt for those who are intolerant.
