Oat and walnut cookies

Oat and walnut cookies are a delicious and healthy alternative to traditional cookies, perfect for breakfast or a snack. Here is the Italian recipe for crispy and nutritious biscuits:

Ingredients

  • 200 g of oat flakes
  • 100 g of chopped walnuts
  • 100 g of wheat flour (you can use whole wheat flour for a more rustic variant)
  • 80 g of brown sugar (or less, to taste)
  • 1 egg
  • 100 g of melted butter (or olive oil for a lighter version)
  • 1 teaspoon of baking powder for sweets
  • 1 pinch of salt
  • 1 teaspoon of cinnamon (optional, for a spicy touch)
  • 1 teaspoon of vanilla extract (optional, for flavoring)

Preparation

  1. Preheat the oven to 180 °C and line a baking sheet with parchment paper.
  2. In a large bowl, mix the oat flakes with the chopped nuts.
  3. Add the flour, baking powder, salt, and cinnamon, and mix well.
  4. In another bowl, beat the egg with the brown sugar, then incorporate the melted butter (or oil) and, if using, the vanilla extract.
  5. Pour the liquid mixture over the dry ingredients and mix until a homogeneous dough is obtained.
  6. Take small heaps of dough with a spoon and place them on the baking sheet, leaving space between them as they will expand during cooking.
  7. Bake in the oven for about 15-20 minutes or until the edges turn golden.
  8. Remove the cookies from the oven and let them cool on the tray for a few minutes, then transfer them to a rack to cool completely.
