Oatmeal and Coconut Cookies

Oatmeal and coconut cookies are a delicious option for a healthy breakfast or a sweet snack. Here is the recipe:

Ingredients

  • 100g of oat flakes
  • 50g of coconut flour (or alternatively shredded coconut)
  • 50g of brown sugar
  • 1 egg
  • 50g of melted butter (or coconut oil for a more “tropical” version)
  • 1 teaspoon of baking powder
  • A pinch of salt
  • (Optional) chocolate chips or dried fruit to taste

Preparation

  1. Preheat the oven to 180°C and prepare a baking sheet by lining it with parchment paper.
  2. In a large bowl, mix the oat flakes with the coconut flour, brown sugar, pinch of salt, and baking powder.
  3. Add the egg and the melted butter (or coconut oil) to the dry ingredients and mix until you have a homogenous mixture.
  4. If you wish, you can add chocolate chips or pieces of dried fruit to your dough to add more flavor and texture to the cookies.
  5. Form small balls with the mixture and flatten them slightly to give the disk shape of the cookies. Place them on the baking sheet, leaving some space between them.
  6. Bake the cookies for 10-15 minutes or until they are golden brown on the edges.
  7. Once baked, let them cool on the baking sheet for a few minutes before transferring them to a rack to cool completely.
