Oatmeal and Chocolate Cookies

Oatmeal and chocolate cookies are an excellent choice for a breakfast full of energy or an afternoon snack. Here I propose a simple and delicious version, with an Italian touch that never hurts.

Ingredients

  • 200 g of oat flakes
  • 100 g of all-purpose flour
  • 100 g of brown sugar
  • 100 g of butter (or coconut oil for a lighter version)
  • 1 egg
  • 1/2 teaspoon of baking powder
  • A pinch of salt
  • 100 g of chocolate chips or chopped chocolate
  • (Optional) a bit of vanilla or cinnamon for flavoring

Preparation

  1. Preheat the oven to 180 °C and prepare a baking tray by lining it with parchment paper.
  2. In a large bowl, mix the softened butter (or coconut oil) with the brown sugar until creamy.
  3. Add the egg and continue mixing well.
  4. In another bowl, combine the oat flakes, flour, baking powder, and salt, then fold these dry ingredients into the creamy mixture.
  5. Stir in the chocolate chips, and if you’ve chosen to use them, flavors such as vanilla or cinnamon.
  6. Using two teaspoons, scoop little heaps of dough onto the tray, leaving some space between each.
  7. Bake in the oven for about 15 minutes or until the cookies are golden brown.
  8. Allow the cookies to cool on the tray for a few minutes before transferring them to a wire rack to cool completely.
