Oatmeal and Chocolate Cookies
17/11/2023Oatmeal and chocolate cookies are an excellent choice for a breakfast full of energy or an afternoon snack. Here I propose a simple and delicious version, with an Italian touch that never hurts.
Ingredients
- 200 g of oat flakes
- 100 g of all-purpose flour
- 100 g of brown sugar
- 100 g of butter (or coconut oil for a lighter version)
- 1 egg
- 1/2 teaspoon of baking powder
- A pinch of salt
- 100 g of chocolate chips or chopped chocolate
- (Optional) a bit of vanilla or cinnamon for flavoring
Preparation
- Preheat the oven to 180 °C and prepare a baking tray by lining it with parchment paper.
- In a large bowl, mix the softened butter (or coconut oil) with the brown sugar until creamy.
- Add the egg and continue mixing well.
- In another bowl, combine the oat flakes, flour, baking powder, and salt, then fold these dry ingredients into the creamy mixture.
- Stir in the chocolate chips, and if you’ve chosen to use them, flavors such as vanilla or cinnamon.
- Using two teaspoons, scoop little heaps of dough onto the tray, leaving some space between each.
- Bake in the oven for about 15 minutes or until the cookies are golden brown.
- Allow the cookies to cool on the tray for a few minutes before transferring them to a wire rack to cool completely.
