Nougat Cheesecake

  • Pieces of nougat
  • Chocolate flakes
  • Honey or liquid caramel (to taste)

Preparation

  1. Start by finely crushing the biscuits, then mix them with the melted butter (and brown sugar if you decide to use it). This mixture will form the base of the cheesecake.
  2. Press the biscuit mixture evenly into the bottom of a springform pan (preferably lined with parchment paper to ease the release).
  3. Let the base rest in the refrigerator for about 30 minutes.
  4. Meanwhile, soak the gelatin in cold water for 10 minutes. If you’re using agar agar, just follow the preparation instructions on the package.
  5. Whip the cream until it is very firm.
  6. In a separate bowl, work the cream cheese with the icing sugar and vanillin (or vanilla seeds) until you achieve a smooth, homogeneous mixture.
  7. Melt the squeezed gelatin (or the prepared agar agar) in a saucepan with a little liquid cream, then mix it into the cheese mixture. If you use agar agar, make sure the mixture returns to room temperature before mixing it with the cheese.
  8. Gently fold the whipped cream into the cream cheese mixture, trying not to deflate it.
  9. Add the nougat pieces to the mixture and stir gently to distribute them evenly.
  10. Pour the resulting cream over the biscuit base and let cool in the refrigerator for at least 4 hours, preferably overnight.
  11. Once set, decorate with more nougat pieces, chocolate flakes, and a drizzle of honey or liquid caramel, if desired.
