Noodles with Shrimp and Vegetables

Here’s a recipe to prepare some appetizing Noodles with Shrimp and Vegetables, with an Italian twist. This variation may include fresh ingredients and flavors that evoke Italian cuisine.

Ingredients

  • 200 g of rice noodles
  • 200 g of shrimp, already cleaned
  • 1 zucchini
  • 1 carrot
  • 100 g of soybean sprouts
  • 1 red bell pepper
  • 2 cloves of garlic
  • Extra virgin olive oil (EVO)
  • Salt
  • Pepper
  • 1 chili pepper (optional)
  • Chopped fresh parsley
  • Juice of 1 lemon
  • 2 tablespoons of soy sauce
  • 1 teaspoon of balsamic vinegar, for a sweet and sour touch

Preparation

  1. Cook the rice noodles following the instructions on the package, drain and set aside.
  2. Slice the zucchini and bell pepper into strips, grate the carrot and chop the garlic.
  3. In a large frying pan or a wok, heat a drizzle of EVO oil and sauté the chopped garlic with the chili pepper.
  4. Add the shrimp and sauté until they turn pink.
  5. Add the vegetables (zucchini, carrot, soybean sprouts, bell pepper) and cook for a few minutes until they soften slightly.
  6. Add the cooked noodles, salt, pepper, chopped parsley, lemon juice, soy sauce, and a teaspoon of balsamic vinegar.
  7. Toss all the ingredients together for a couple of minutes so the flavors mix well.
