No-Bake Tart

The no-bake tart is a fresh and quick version of the classic Italian dessert. You can prepare it with a base of biscuits and a cream of mascarpone or ricotta, for example. Here I propose a simple and tasty variant with a biscuit base and a cheese cream.

Ingredients

  • For the base:

    • 300 g of dry biscuits (Digestive type or similar)
    • 150 g of melted butter
  • For the cream:

    • 250 g of mascarpone
    • 150 g of powdered sugar
    • 1 teaspoon of vanilla extract
    • Juice of 1 lemon
  • To decorate:

    • Fresh fruit of your choice (strawberries, kiwi, raspberries, etc.)
    • Clear gelatin for desserts (optional)

Preparation

  1. Biscuit base: Finely chop the biscuits using a mixer, or place them in a food bag and crush them with a rolling pin until finely crumbled. Mix the crumbs with the melted butter until you achieve a homogeneous mixture. Press the mixture onto the bottom of a springform cake tin, creating an even layer that also covers the edges. Refrigerate for at least 30 minutes so it hardens.

  2. Cream: In a bowl, whip the mascarpone with the powdered sugar until you have a smooth cream. Add the vanilla extract and lemon juice, mixing until everything is well blended.

  3. Assembly: Pour the cream onto the now solid biscuit base and level it with a spatula. Put it back in the refrigerator for at least another 2 hours to firm up the cream.

  4. Decoration: Before serving, decorate the tart with fresh fruit of your choice. If you wish, you can brush some clear gelatin on the fruit to give it shine and keep it fresh.

  5. Service: Remove the tart from the cake tin and serve it fresh.

Curiosity

This tart is perfect for the summer or when you do not feel like turning on the oven. Furthermore, it is possible to customize the base with different types of biscuits or add flavors to the mascarpone like cinnamon, orange zest, or liqueurs for an extra touch. Remember to keep it in the refrigerator until serving to maintain its consistency and freshness.
