No-Bake Raspberry Cheesecake

The no-bake raspberry cheesecake is a fresh and delicious dessert, perfect for spring or summer. Here’s how to make it.

Ingredients

  • 250 g of digestive biscuits or graham crackers
  • 120 g of melted butter
  • 500 g of cream cheese (like Philadelphia)
  • 120 g of powdered sugar
  • 1 teaspoon of vanilla extract
  • 250 ml of fresh cream for whipping
  • 200 g of fresh or frozen raspberries
  • 3 sheets of gelatin (or equivalent in gelatin powder)
  • Juice of 1 lemon
  • Sugar to taste for the raspberry sauce (if desired)

Preparation

  1. Begin by crushing the biscuits in a food processor until they are finely crumbled. Mix the crumbs with the melted butter until you have a homogenous mixture.

  2. Press the biscuit mixture into the bottom of a springform pan (about 22-24 cm in diameter) lined with parchment paper, creating an even layer. Put the base in the refrigerator to set while you prepare the filling.

  3. Soften the gelatin sheets in cold water for about 10 minutes. Meanwhile, in a large bowl, work the cream cheese with powdered sugar and vanilla extract until smooth.

  4. In another bowl, whip the cream until it is firm but still soft. Gently fold the whipped cream into the cream cheese mixture to avoid deflating it.

  5. Heat the lemon juice in a small saucepan. Squeeze out the gelatin sheets and dissolve them in the warm lemon juice. Let it cool for a few minutes and then pour the liquid gelatin into the cream cheese and cream mixture, stirring well to distribute evenly.

  6. Pour the filling over the cooled biscuit base and level with a spatula. Refrigerate for at least 4 hours, or even better, overnight.

  7. To serve, prepare a raspberry sauce by simply blending the raspberries with a bit of sugar to taste (you can strain the sauce to remove the seeds). Alternatively, decorate the cheesecake with fresh raspberries on top.
