No-Bake Peach Cheesecake

Ingredients
- 250 g of dry biscuits (like Digestive or Oro Saiwa)
- 100 g of melted butter
- 500 g of cream cheese (like Philadelphia)
- 100 g of powdered sugar
- 200 ml of fresh cream
- 10 g of sheet gelatin (fish glue)
- 3 ripe peaches
- 1 lemon (for the juice)
- Honey or peach jam for garnishing
Preparation
- Start by grinding the dry biscuits until you get a fine consistency. You can use a food processor to speed up the process.
- Mix the ground biscuits with the melted butter until the mixture appears like damp sand.
- Press this “sand” onto the bottom of a springform pan about 22 cm in diameter, creating a compact base. Place in the refrigerator to cool for at least 30 minutes.
- In the meantime, soak the sheets of gelatin in cold water for 10 minutes.
- In a large bowl, blend the cream cheese with the powdered sugar and lemon juice until the mixture becomes smooth and homogeneous.
- Squeeze out the softened gelatin and dissolve it in a saucepan with a couple of tablespoons of water over low heat. Once completely dissolved, let it cool slightly and then incorporate it into the cheese mixture.
- Whip the fresh cream in a second bowl until firm.
- Gently fold the whipped cream into the cheese mixture, trying not to deflate it.
- Slice the peaches thinly, after having washed and dried them.
- Pour the cheese filling over the cooled biscuit base and level with a spatula.
- Arrange the peach slices on the surface of the cheesecake, creating a pattern of your liking.
- Let the cheesecake cool in the refrigerator for at least 4 hours, better if overnight.
- Before serving, you can garnish with a bit of honey or peach jam to add an extra touch of sweetness and gloss.
You could also add a sprinkle of crumbled amaretto or a few fresh mint leaves for garnish and to give an additional contrast of flavors.
