No-Bake Peach Cheesecake

The no-bake peach cheesecake is a fresh dessert, ideal for the summer. Here is the recipe with an Italian touch.

Ingredients

  • 250 g of dry biscuits (like Digestive or Oro Saiwa)
  • 100 g of melted butter
  • 500 g of cream cheese (like Philadelphia)
  • 100 g of powdered sugar
  • 200 ml of fresh cream
  • 10 g of sheet gelatin (fish glue)
  • 3 ripe peaches
  • 1 lemon (for the juice)
  • Honey or peach jam for garnishing

Preparation

  1. Start by grinding the dry biscuits until you get a fine consistency. You can use a food processor to speed up the process.
  2. Mix the ground biscuits with the melted butter until the mixture appears like damp sand.
  3. Press this “sand” onto the bottom of a springform pan about 22 cm in diameter, creating a compact base. Place in the refrigerator to cool for at least 30 minutes.
  4. In the meantime, soak the sheets of gelatin in cold water for 10 minutes.
  5. In a large bowl, blend the cream cheese with the powdered sugar and lemon juice until the mixture becomes smooth and homogeneous.
  6. Squeeze out the softened gelatin and dissolve it in a saucepan with a couple of tablespoons of water over low heat. Once completely dissolved, let it cool slightly and then incorporate it into the cheese mixture.
  7. Whip the fresh cream in a second bowl until firm.
  8. Gently fold the whipped cream into the cheese mixture, trying not to deflate it.
  9. Slice the peaches thinly, after having washed and dried them.
  10. Pour the cheese filling over the cooled biscuit base and level with a spatula.
  11. Arrange the peach slices on the surface of the cheesecake, creating a pattern of your liking.
  12. Let the cheesecake cool in the refrigerator for at least 4 hours, better if overnight.
  13. Before serving, you can garnish with a bit of honey or peach jam to add an extra touch of sweetness and gloss.

You could also add a sprinkle of crumbled amaretto or a few fresh mint leaves for garnish and to give an additional contrast of flavors.
