No-Bake Blackberry Cheesecake

  • 200 g of fresh blackberries
  • A pack of fresh blackberries for decoration
  • Juice of 1/2 lemon

Preparation

  1. Start by finely grinding the biscuits. You can do this manually with a rolling pin or by using a mixer.
  2. Melt the butter and mix it with the ground biscuits until you obtain a homogeneous mixture.
  3. Line the bottom of a springform pan (about 22 cm in diameter) with parchment paper and spread the biscuit mixture, pressing well with the back of a spoon to create a compact base. Put in the refrigerator to cool for about 30 minutes.
  4. Meanwhile, hydrate the gelatin in a bowl with cold water for 10 minutes.
  5. In a bowl, work the spreadable cheese with the powdered sugar and lemon juice until you obtain a smooth mixture.
  6. Squeeze out the gelatin, then dissolve it in a bain-marie or microwave without boiling it. Once dissolved, let it cool down and then incorporate it into the cheese mixture.
  7. Whip the cream and gently fold it into the cheese mixture with upward motions to avoid deflating it.
  8. Distribute the washed and dried blackberries on the cooled biscuit base and then pour the cheese mixture over them.
  9. Let the cheesecake rest in the refrigerator for at least 4 hours, better if overnight.
  10. Decorate with fresh blackberries before serving.
