New York Cheesecake with Berries

Ingredients

For the base:

  • 150 g of digestive biscuits
  • 75 g of melted butter

For the filling:

  • 900 g of creamy cheese (like Philadelphia)
  • 200 g of sugar

  • 250 ml of fresh cream
  • 1 tablespoon of vanilla extract

Preparation

  1. Prepare the base by crushing the digestive biscuits in a food processor until you get a fine flour. Mix the biscuit powder with the melted butter until you obtain a homogeneous mixture. Press the mixture onto the bottom of a 23 cm diameter springform pan and let it cool in the refrigerator.

  2. For the filling, in a large bowl, blend the creamy cheese and the sugar until smooth. Add the eggs and the yolk, one at a time, continuing to mix. Incorporate flour, fresh cream, vanilla extract, and grated lemon zest.

  3. Pour the cheese mixture over the biscuit base in the pan and level it with a spatula.

  4. Bake in a preheated oven at 160 °C for 55-60 minutes or until the cheesecake is almost set in the center but still slightly wobbly.

  5. Turn off the oven, open the door slightly and let the cheesecake cool inside for about 1 hour to avoid cracks. Then, remove it from the oven and let it cool completely before refrigerating for at least 4 hours.

  6. For the topping, arrange the berries on the surface of the cheesecake. If you like, dust with icing sugar and sprinkle a little lemon juice on top to enhance the taste of the fruit.
