Neapolitan-style Cod Casserole

Ingredients

  • 600 g of already soaked and desalted cod
  • 500 g of cherry tomatoes
  • 2 tablespoons of salted capers
  • 100 g of Gaeta black olives
  • 2 cloves of garlic
  • 1 hot chili pepper
  • Fresh parsley to taste
  • Dried oregano to taste
  • 4 tablespoons of extra virgin olive oil
  • Salt to taste
  • Pepper to taste

Preparation

  1. Start by rinsing the capers under running water to remove the excess salt and set them aside.

  2. Pat the cod dry with kitchen paper and cut it into pieces of about 5-6 cm.

  3. In a large pan, heat the extra virgin olive oil with the peeled garlic cloves and the chili pepper. When the garlic is golden, remove it.

  4. Add the cod and brown it for a few minutes on all sides until well golden. Then, remove it from the pan.

  5. Add the halved cherry tomatoes to the pan and cook for a few minutes until they begin to break down.

  6. Add the capers and olives and stir gently.

  7. Put the cod back into the pan with the tomatoes, add salt and pepper to taste, a sprinkling of oregano, and cook covered on medium-low heat for about 15-20 minutes.

  8. In the meantime, chop some fresh parsley.

  9. Once cooked, sprinkle the cod with the chopped parsley and serve the dish hot.
