Nachos
17/11/2023Nachos are a dish of Mexican origin consisting of tortilla chips, often seasoned with cheese and served with various sauces. I can suggest an Italian version of this snack, perhaps enriching it with local ingredients. Here is the recipe for preparing nachos with an Italian twist.
Ingredients
- 200 g of tortilla chips
- 150 g of mozzarella or another Italian melting cheese (such as scamorza)
- 100 g of cherry tomatoes
- 50 g of pitted Taggiasca olives
- Dried oregano to taste
- Chili pepper as desired
- Fresh tomato sauce (such as pizzaiola sauce, if you want to keep the Italian theme)
- Fresh basil for garnish
For the Italian guacamole sauce:
- 1 ripe avocado
- Juice of half a lemon
- Salt to taste
- A clove of garlic
- A tablespoon of grated Parmesan cheese
- Chopped parsley to taste

First, prepare the Italian guacamole sauce: mash the avocado pulp and mix it with lemon juice, salt, chopped garlic, grated Parmesan, and parsley. Stir until you get a smooth cream and set aside.

Cut the cherry tomatoes in half and the Taggiasca olives into rounds.

Arrange the tortilla chips on a baking sheet lined with parchment paper so that they are close to each other but not overlapping too much.

Sprinkle the tortilla chips with cherry tomatoes, olives, oregano, chili pepper (if using), then cover everything with the melting cheese.

Place in a preheated oven at 180 °C and bake until the cheese has melted and lightly browned, about 5-10 minutes.

Take the nachos out of the oven and serve them hot with a spoonful of fresh tomato sauce on top, garnishing the dish with fresh basil leaves.

Serve the nachos with the Italian guacamole sauce on the side.

Although nachos are typically Mexican, by adapting the recipe with Italian ingredients such as mozzarella, cherry tomatoes, and Taggiasca olives, you get a dish with a familiar taste but with an international twist.
