Mushroom Soup

Mushroom soup is a delicious and comforting dish. Here is a recipe to prepare an Italian-style mushroom soup:

Ingredients

  • 500g of mixed mushrooms (e.g., champignon, porcini, pioppini)
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, chopped
  • 1 liter of vegetable or chicken broth
  • 100ml of fresh cream
  • 2 tablespoons of extra virgin olive oil
  • 1 sprig of fresh thyme (or 1/2 teaspoon dried)
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish
  • Crispy bread or croutons to accompany (optional)

Preparation

  1. Clean the mushrooms with a damp cloth and slice them thinly.
  2. In a large pot, heat the extra virgin olive oil and sauté the onion and garlic until they become translucent.
  3. Add the mushrooms and thyme, cook until the mushrooms start to release their liquid and become golden.
  4. Pour in the vegetable or chicken broth and bring to a boil. Reduce the heat and simmer for about 20 minutes.
  5. Use an immersion blender to partly blend the mushrooms in the pot to thicken the soup while still leaving some pieces whole for texture.
  6. Add the cream, mix well, and continue to cook for another 5 minutes. Adjust salt and pepper to taste.
  7. Serve the hot soup, garnished with chopped fresh parsley and accompanied, if desired, by crispy bread or croutons.
