Quesadillas with Mushrooms

Mushroom quesadillas are an exquisite dish that blends the rustic flavor of mushrooms with the comforting warmth of melted cheese inside a tortilla. Now, imagine giving this dish a little Italian twist, perhaps using porcini mushrooms for their intense flavor and adding a touch of fresh parsley for a fresher aroma. Here is the basic recipe for mushroom quesadillas, with a pinch of Italian flair.

Ingredients

  • 4 flour or corn tortillas (depending on preference)
  • 250 g of fresh mushrooms (porcini, champignon, or a mix of your choice)
  • 200 g of melting cheese, such as mozzarella or a blend of Mexican cheese (alternatively, a good provolone could work)
  • 1 small onion
  • 2 tablespoons of extra virgin olive oil
  • 1 clove of garlic
  • Salt and pepper to taste
  • Chopped fresh parsley (optional for the Italian twist)
  • Chili powder (optional)

Preparation

  1. Clean the mushrooms with a damp cloth or a brush and slice them. Avoid washing them under running water as they absorb water, which could affect the final texture of the dish.

  2. Finely chop the onion and the garlic. Heat the extra virgin olive oil in a pan over medium heat and sauté the onion and garlic until the onion becomes translucent.

  3. Add the sliced mushrooms to the pan, season with salt and pepper to taste, and cook until they are golden brown and all the water has evaporated. If you like, you can add a pinch of chili powder for a bit of spiciness.

  4. Once cooked, sprinkle the mushrooms with chopped fresh parsley and mix well (this is the Italian addition).

  5. In another large pan, lightly warm one side of a tortilla, then flip the tortilla over and top with a generous amount of cheese and a quarter of the cooked mushrooms.

  6. When the cheese has started to melt, fold the tortilla in half, covering the filling. Cook for a few more minutes on each side until it is golden brown and the cheese has completely melted.

  7. Repeat with the remaining tortillas.

  8. Serve the quesadillas hot, cut into triangles.

Mushroom quesadillas can be enjoyed as they are or paired with guacamole sauce, pico de gallo, or a splash of lemon juice to add a note of freshness. Enjoy your meal!
